Sounds like the unmounted PF store is at the heart of this problem.
It ought to be deleted not just dismounted.

"A public folder store should never be mounted, or present (even in a
dismounted state) on the front-end server."

Remember you can always re-create it later if you want to change the
servers role.

Yes...the selection list on the backup server looks like this:
1.  \\server.domain.com\C:\*.* /SUBDIR

The ONLY thing that is different in the backup job of these two
servers, is that I don't need a PF store on this server, so it's
unmounted through the ESM and excluded from the backup job.

I am going to try remounting the PF store and rerunning the backup
job, to include the PF store and see if that makes a difference.
