This is a good point. However in my company (small shop - 12 people) file storage is cheap, while Exchange and SQL storage is not (talking about backup/recovery procedures). I would't care that much to have dozens of GB's of junk stripped files somewhere on a NAS, if that can save even a few GB in Exchange and CRM/SQL stores.
