You mail goes through n routers before it arrives at its destination. At any network hop along the way it is possible someone could skim the stream to read all traffic (hence the concern by some folks about Poindexter's little group of information gathering trolls). And if you're using TLS, most of those implementations are still subject to potential man in the middle attacks as well. So unless your mail is encrypted the difference between sending mail between companies 'directly' and using a 3rd party provider is that in one instance you know it is going through another environment and being processed.
