You don't.

Here in NZ, if they did and the contract did not allow for it then it
would probably be considered wire-tapping and in breach of the crimes
act (not that I am a lawyer).

This is one of the reasons I am hesitant to use such a service offshore
as the privacy/criminal laws may be less than in my country
