The only reason I would leave the old server running is to allow those on
vacation to return so that their Outlook will switch automatically.

Do you have replicas of all public folders, plus the Free-Busy, OAB and
Forms Library (if applicable) folders on the Exchange 2007 server?  Have you
tried removing a replica of one folder (make a test one if you want) from
Exchange 2003 and verifying that you can get the content from the Exchange
2007 server?

Also, I've seen Outlook have a stickiness where it won't switch public
folder servers readily, and refreshing the profile (remove the last letter
of the name and click Check Name) seems to fix it.

Do you have any thoughts on the wisdom of not killing off the old server
after everything was transferred to the new one?  I thought I was being
cautious, but it seems to have been a mistake.
