I just heard that Symantec Backup Exec has a nice VSS backup product that supports brick-level restore without the heartbreak of brick backup. I can't recommend it myself because I have no experience with it, and I don't know if it works with Exchange 2003 or just Exchange 2007, but you're welcome to contact them or peruse their website to find out.
