Do you really want to have company data sent out to a person that no longer is part of the company? You shouldn't do it, IMHO. What? It is personal email? Then it should never have been stored on company email servers in the first place.
If you STILL want to do it, put everything in his mailbox to his Inbox and have him access his mailbox from home with a POP3 client. Run ExMerge against his box and burn the resulting PST onto a CD. Have him synchronize his PDA with his Exchange server mailbox.
