Do you really want to have company data sent out to a person that no longer
is part of the company?  You shouldn't do it, IMHO.  What?  It is personal
email?  Then it should never have been stored on company email servers in
the first place.

If you STILL want to do it, put everything in his mailbox to his Inbox and
have him access his mailbox from home with a POP3 client.  Run ExMerge
against his box and burn the resulting PST onto a CD.  Have him synchronize
his PDA with his Exchange server mailbox.  Etc. etc.

How would you go about forwarding selected e-mail to a users home.  All the
e-mail is now currently residing on the Exchange Serve (5.5).  The user does
NOT want to go thru each message and forward it to his home e-mail account.

2nd question how do you unload his Outlook Contact folder and send it to his
home via e-mail?
