Plan on making a new default smtp address for the entire company.  Since my
current one points uses the same name as the last 5.5 server in my site.  
When I remove that server from the site and pull it off the network... can
that
smtp address still be used for the 2000 site?  When you say, it contains the
same domain and it exists...  you mean if the domain exists?

Yes, it can be anything as long as it's valid.  However, without adding
new http virtual servers, you're going to need to ensure all your OWA
users have at least one smtp address that matches the one you'll see as
a top-level folder when you browse your M: drive.  It can be completely
random, as long as it contains the same domain and it exists.
