Well you could accidentally "turn off" the SQL box and see what an uproar arises :) Seriously though, double all downtime for service because of this dual role. People will tolerate downtime for just about anything but email. Maybe if you remind them that every time there is a maintenance requirement on SQL, email will be going away also. By the sounds of the DB service though, you could probably get away running it on a software mirrored beefed up desktop.
