Your users....not mine. Mine check their mail about once every 4 hours. Which is hard on my coming from a company that lived on email.

Keep in mind, this is email, not folder access. Your users are not going to notice if it takes 1 second or 5 to get an email. They wont see it till it hits the inbox and it will be scanned by then. I don't know what AV software you are using, but with Scanmail I do MAPI, AVAPI and message body scanning. We never noticed a slowdown in anything, but I know some people on the list have said they have with the message body scanning.
