When you use cached mode, you only get new messages from the server. Everything else is in the cache (read OST file). When you remove the cache, you are working on the server, and each message action causes the local machine to interact with Exchange. If you have a busy network, or issues with your network, it will be reflected in the response time, and will slow down the response. If you have a PST file for archiving or whatever, your response time would only be affected if your local machine is busy, or there is a problem with your PST file.
