for sendmail edit the sendmail.cf file directly, eg.,
O SmtpGreetingMessage=$j I'm not Sendmail; $b
- or - add
define(`confSMTP_LOGIN_MSG', `$j ObscureMTA; $b')dnl
to the sendmail.mc file and rebuild the .cf file.

And read http://www.sendmail.org/m4/tweakingoptions.html.

And don't know about leafnode, I'm using INN.
