xmodmap is your friend!  Or, if you're using sawfish, you can even
adjust that quite simple in the gnome control center.

There I've set a key to increase the volume by having it execute this
command:

aumix -v+10 -S

To decrease volume, I've set:

aumix -v-10 -S
