Rory Sounds like your needle valve isn't closing. Time to clean the carbs and install rebuild kit. Make sure the floats move freely, remove all the jets and clean all the passages. Reassemble with new gaskets and needle valve. It's not a difficult procedure, just remember to note settings of idle speed and air mixture adjusters so you can set them when finished. Good luck.
