Nothing like telling someone what to do with their lives
unsolicited, but if Llundrub was in a civic-minded mood,
he could make quite a splash and do a lot of good by
dedicating the royalties, or a goodly portion thereof, to
some worthy group working to help Katrina victims.  The
restaurant might even be willing to underwrite some of
his expenses, since it would also benefit from the
publicity.

Progressive organizations could feature the book as
a premium; progressive blogs would promote it.  He'd
be just about guaranteed spots on the talk shows and
interviews in the print media.

If he talks as delightfully as he writes, he might want
to find an as-told-to-type writer to put the text
together rather than spend the time writing it himself,
and he could surely find a cookbook editor to get his
recipes in shape for publication.  If *they* were
civic-minded, they might even donate their services
or discount them significantly.

Don't know if he's into organic ingredients, but if
he is, a good bet for a publisher might be Chelsea
Green, an activist publisher dedicated to sustainable
living and the politics thereof:
