The article in SO about the Stansbourough Gotland sheep is in the Spring 2002 issue, page 34. It just barely mentions the use of the wool in The Lord of the Rings.
Speaking of which, I was so disappointed in The Two Towers that I spent most of the movie looking at the closeups of the cloaks, of which there were many :) It is an undulating twill like Ann is considering for her cloak. The cloth looked like it was sett quite openly, given the amount of light visible through it, and that would also contribute to the wonderful drape. The yarn must have been quite fine, as the pattern is only just visible even when the closeup is very close up.
