That's similar to some questions I had when I first tried true worsted spinning--meaning well-combed fibers, spun with the twist being smoothed into the fibers between my fingers. Some yarns remained hairy no matter how carefully I combed and spun. Posting here to ask about this, and gaining more combing/worsted spinning experience, I concluded that's just the way it is sometimes :) Kind of like how angora will halo no matter how tightly spun it is--but it will halo less if worsted spun and/or with higher twist. You will probably find you will still have good stitch definition--just not as great as commercially combed yarns might give. Another thought is to add another ply to your yarn. Two ply yarns tend to be rather flat when knitted. Three plies and up are much more round. This shows more in knit/purl patterns, including cables, than it does in stockinette stitches or open lace stitches. I would go for it, if I were you :) I've combed some Shetland and Shetland crosses, and the yarns are yummy, even if they do have more hairs sticking out than commercial yarns.
