Off the top of my head:

1) When you have a note tied to a note in a different layer.

2) When the first note of a second ending is tied to the previous note.

3) After you've applied the "courtesy accidentals" plugin, and you 
decide that a particular courtesy accidental is superfluous.

There are lots of other nonstandard, but still "practical" situations 
where you might want to hide an accidental that would normally show.  
That key is also frequently used to manually *show* accidentals, for 
instance courtesy accidentals.

Why would you want the program to second-guess you?  Obviously the 
ability to show and hide accidentals on a case-by-case basis is 
essential.  Do you really want software that wouldn't hide or show an 
accidental when you pressed the "hide/show accidental" key, because it 
somehow determined that you didn't have a good reason for doing so?

And be nice to the people at Coda tech support, please.  Their job is to 
explain how the software works, which they did.  If you aren't satisfied 
with the way it currently works, you can send in a feature request.  
However, in this situation, I'd advise you to think carefully about what 
you are asking for.
