Thanks to you both.  I have not found a touchpad option in Windows to
correspond to the Mac function Johannes mentions.  I have adopted
David's suggestion and reverted to the Classic UI.  The "double click
and hold" smart shapes have become better behaved: still somewhat
random, but with a much higher proportion of correct functioning than
when I first tried using them.  Slurs now have three responses: the
correct one; a dashed rectangle that disappears when you lift your
finger at the end of the move; and a slur to the next note that occurs
on the second depression of the button, rather than when you lift your
finger, which is when it should happen.
