One other question - where a dynamic affects a whole SATB grouping (singing in rhythmic unison), is it acceptable/appropriate to place the dynamic above the stave in question, rather than each individual system?

Well, I don't know about "acceptable", but unless you expect your piece to be aggressively rehearsed by the choral director, the three parts that you don't mark will almost certainly ignore the marking. As a general rule, vocalists aren't going to look at the dynamics in other parts, and even if they do, they won't assume it necessarily applies to them.

That's not to say I haven't seen published choral scores in which it's done, but when that happens the first thing I do as a choral director is bring it the singers' attention and tell them to mark their parts.

That's the long answer. The short answer is: No, it's not acceptable/appropriate. Put the marking in all parts.
