I sometimes split everything out on to it's own staff using explode parts to quickly change noteheads for say the high-hat and cymbal parts to "x"'s Then I use implode music to put the high hat, cymbals and snare back together in the same layer on the same staff. Finale will sort it out so that everything is clean as far as the stems go.

Do you know that you can set the Percussion Map so that all incidences of the same note will automatically appear as X heads (or any other shape you want) AND appear on the line or space you want? This is quite a bit quicker than separating, changing, and merging, especially when we are talking about an entire drum part.
