There is no such option in OS X, nor (apparently) is there one needed (I am told OS X always includes all fonts when printing to PS printers).
The problems you are seeing are due to incompatibilities in the font encoding between older fonts and Finale OS X (any flavour). There is something somewhere in the OLD. The answer is to use a font editor and use another encoding. Unfortunately I can't remember any more what I did to my fonts when I had the problem.
If this is happening with Finale's own fonts make sure you have the latest versions installed. There used to be a font updater for 2k4, but I think was also included in the 2k4c update.
MakeMusic did have some font problems in the first 2k4 edition.
If this doesn't get you anywhere, let me know exactly which fonts you are having trouble with, and I will look into it.
