I am not familiar with these 2 fonts. Are they merely text fonts? I am not clear what fonts Finale uses as a substitute.
They are both text fonts and they are "not available" because you don't have them. It is not Finale that is offering a substitute, but Windows, and it is proposing to substitute one or more of the fonts that Windows uses for system messages, menu headings, etc.
Palatino used to be one of the Mac system fonts. Apple licensed it from whoever owns it, but when OSX was introduced, all these licensed fonts were dropped in favor of home-grown variants (Zapf Chancery became Apple Chancery, for instance). Use Finale's Swap One Font for Another utility (under Data Check) to change Palatino to Times Roman.
Caslon is a longstanding traditional font family, but I don't have it in my own font collection, so I can't describe it. I'm sure you can find it online. If it turns out to be a sansserif font, substitute Arial bold (to make it "big"); if it is a serif font, substitute Times Roman bold.
