In Simple you can enter a note, then press T to make a tie to the next note to be entered.
I also found not hearing the correct pitch when entering is really screwing me up. In Simple, you add accidental after you enter un- accidentaled note. It is almost asking for mistake.
You may add the accidental before or after entering the note. If, for instance, the sharp tool is selected, the next note (entered by clicking on the staff or by typing a letter) will have a sharp before it.
