Print the document to a ps file. Then open the ps file with Preview and save it as PDF. It works great. I do this all the time because I still use MacWord 5.1. Just be sure to select the "Include All Fonts" options when you print to the ps file.
Since you are also keeping Classic programs alive, have you looked into SheepShaver? I am soon going to try to get it running. It will allow you to keep running Classic programs even on an Intel Mac. It has the potentially to run them better than Classic does, though less seamlessly. It's more like having a virtual machine window open, like Virtual PC.
