The assumption with linked parts is that most users will create the score layout first, and only when the score is complete and ready to print begin work on the parts. I think you would, in fact, find it frustrating if you were adjusting expressions, articulations, slurs, etc. in the parts after you'd already completed work on the score, only to find out that these adjustments had also affected your score and messed up a layout you'd assumed had been "locked in."
The use of the override key makes perfect sense so long as you understand that, by default, actions in the score are global, and actions in a part are local.
This is also how Sibelius does it -- while they do not have an "override key" (to my knowledge), they also share the basic philiosophy that score actions filter down to parts, but part actions don't filter back up to the score.
