Interesting question, but I'd have to try it to see. My first reaction is that it would be VERY difficult to play, because the plucking finger would tend to dampen the harmonic. The same harmonic would probably sound great on a classical guitar, but much less so on the higher-pitched violin.

On the other hand, might work great on cello!
