Pizz on that B harmonic is nearly inaudible even to the violinist, so I would definitely file that idea under "impractical". You can write the normal pizz on the high B, and assuming you have an entire violin section playing forte, you will get something. It's hard to say how effective it will be without knowing the context, but I can't personally imagine a circumstance where asking for that pizz would be a superior solution compared to a number of alternatives.
