You should have an app called XDarwin in your applications folder.
Launch that, and with any luck and X windows session will start, 
and you'll get an xterm.
In the xterm type
% gimp &
With any luck gimp should start up.

For true beginners, I'd suggest downloading OroborOSX from
http://julia.et.ic.ac.uk/adrian/software/oroborosx/
and using that. It is a little easier to figure out.
