It's that simple--but you have to do them individually.

bundle-gnome won't do anything if you rebuild it:  it just depends on
the major GNOME packages, and thus causes them to get installed.  I'd say
to rebuild gnome-core (if you are using GNOME 1) or gnome-session (for
GNOME 2).
