Some package requires TeTeX. Fink gives you the choice (via a prompt) of installing its version ("tetex" and related packages) or to use one that's already on your system (system-tetex). Fink doesn't just pick one, because there may be a situation where want to have both installed--it asks you what you want.
That being said--since what you were doing was updating, there may be something weird going on with one of the packages you are updating. Can you post the results from running "fink list -o" to the list ? (that'll be all of your outdated packages)?

I didn't try to install tetex. It was installed by fink to satisfy some
dependency, but it didn't work. As far as I know, I haven't tried to change
any of the default settings as I don't know enough about how they work to
make an educated guess as to what to do next.

When you install a package called system-something, you're telling Fink
that you already have a non-Fink version of that package installed
somewhere. If you want Fink to install tetex for you, don't do
system-tetex, do tetex. :)
