I think you have to do this by hand. I cannot imagine an easy automatic solution.

Depending on how much you have installed, this may indeed be the fastest solution.
BUT: On Panther right now, "stable" and "unstable" are somewhat, how to say, "preliminary" labels. In suite a few cases, the package version in unstable got a more thorough testing than the one in stable. I would wait for the release of the first binary distribution for Panther (no idea when this will be) before switching back to stable.
