Fink is mostly voodoo to me , but here is what I would do

1st check the web:
http://fink.sourceforge.net/pdb/package.php/unison
http://fink.sourceforge.net/pdb/package.php/unison-nox

So if you are have OS X 10.3 , then the package is not even in unstable .

Aside, apt-get would never work for an unstable package as there is no binary available .
