Fink usually does a Linux/Unix-style build, unless the sources also 
provide a way to do an OS X application.

 From the terminal you can use

inkscape [name of file to open]

where you can put in the name of a file to open in inkscape if you want.

Otherwise, if you have /sw/bin open in the Finder, you can double-click 
on the inkscape icon to launch it.  Note that in this case you can't 
drag files to the icon to open, because the inkscape program is treated 
as a document for Terminal.
