Exactly what you said. In fact, I regulary do a 
find -type d -name CVS | sudo xargs rm -r
to get rid of those.

Perhaps I should 
- manually remove the fink (dists) tree, 
- then manually cvs co,
- then selfupdate-cvs again ??
