I was looking at the GLUT port and saw that it was relying on the X server's provided OpenGL GLX stuff. I thought a neat project would be to prod it into using the Apple OPenGL calls. So far, I've only been able to find documentation about the Objective C classes to use OpenGL on the Apple developerwebsite - does anyone know if they have a C interface to all this?
