I'm not sure why you still have system-ghostscript-6.01-1 on your system. 
However, I can explain what is happening.

Not too long ago, it was discovered that Gerben Wierda's ghostscript v.7
package does not have X11 support compiled in, and does not work with gv.
I revised the system-ghostscript package to now say that it provides
"ghostscript-nox" rather than "ghostscript".  But gv is insisting on
"ghostscript", so the most recent version of system-ghostscript is
unacceptable.  However, the old version which you have on your system said it
provided "ghostscript", which is why fink is attempting to downgrade.

I know that Wierda recently made a ghostscript v.8 iInstaller package which
has X11 support, but I haven't had a chance to make a system-ghostscript
package for that one.  To get a functioning gv, you'll need to either install
that and hack system-ghostscript to support it, or install ghostscript via
fink.
