Geeee... After various tests, i've found that adding 

usb libusb:-07:005

to my /sw/etc/sane.d/epson.conf solve some part of my pb : now,
xsane recognize my scanner.

But whatever i try next, xsane freeze. For example, if i try to scan
something, the scanner works, but that's all : nothing seems transferred
to the Mac and i have to do a Ctrl-C to kill xsane.

scanimage -T also freeze:

$ scanimage -T
scanimage: scanning image of size 424x584 pixels at 1 bits/pixel
scanimage: acquiring gray frame, 1 bits/sample
scanimage: reading one scanline, 53 bytes...      <--- Freezed
