Really? KDE and GNOME are in fink, both source and binary distributions. XFCE is under unstable tree.
I've also noticed that if I run startx from the command line I keep getting output to my terminal while X is running. Is there a way to turn this off?
You should better start X11 by double clicking XDarwin.app or X11.app in Application folder.
On Panther, X11.app exists in the /Applications/Utilities, instead of /Applications.
