Well, perhaps it is possible to change the default compiler when building the tetex packages, but I have tetex 3.0 installed on Linux and MacOS, and the "latex" command outputs PDF by default. This is consistent with the following extract from the official tetex 3.0 changelog: > Default engine: pdfetex is now the default engine used for most formats > (including latex).
