Initially, though, it's not a few builds per week, but one batch build of everything (or at least as much as possible), which takes up to a few weeks. And we would need one Mac environment per supported platform, currently: 10.5/powerpc 10.5/i386 10.6/i386 10.6/x86_64 10.7/x86_64 10.8/x86_64 since there's no point building packages just to get their file contents without actually doing a binary distribution for each configuration, too.
