Hello,
I have the same issue installing mediatomb 
(in particular taglib and tag lib-shlibs) 
on Leopard 10.5.8 PowerPC via fink.
Package manager version 0.34.5, Xcode version is 3.1.4. 
The following is from trying: 
fink install taglib

CMake Error at /sw/share/cmake-2.8/Modules/Platform/Darwin.cmake:190 (message):

 CMAKE_OSX_DEPLOYMENT_TARGET is '10.5' but CMAKE_OSX_SYSROOT:

  is not set to a MacOSX SDK with a recognized version.  Either set
  CMAKE_OSX_SYSROOT to a valid SDK or set CMAKE_OSX_DEPLOYMENT_TARGET to
  empty.
