Now, this is interesting: I finally got hold of Xcode 4.2 for Snow leopard, re-installed fink and am able to install doxygen without any problems.
It looks to me, that the older Xcode version 3.2.6 is to be blamed. It really bugs me, that Apple doesn't provide Xcode 4.2 for Snow Leopard anymore and one has to find it via bit torrent.
