I have a 65 GTO Coupe and I really dont think you could make a post into a coupe without spending a fortune. You could swap doors but you would still have the body support to deal with, I say leave it alone. I have a 55 Chevy Belair 4 door and I saw a show on HotRod where the shortened it and made it a 2 door vert. About 50K in the project.......
