As of later this year, Lotus will release a Linux-Version of Notes !
If you don't like Linux, you can already have it on a lot of other
platforms.
With Exchange, you don't have that choice (and as it is a resource-hog,
it will fall flat very soon ;-) ).

If you only want to do mail and don't need all the other features Notes
brings with it, you can also go with a reasonably secure mail-software,
like qmail.
This runs on Unix only, though. OTOH, it's free.

Before you buy a product, do some research into email in general.
