Are you talking about a application level or tcp/ip level logging?
I guess that you rerfer to tcp/udp/icmp packets for example. If this is the case
I think that you could use a firewalls based-on Linux running a ipchains
(non-early-kernels) and syslogd with the command tail to display the log online.
