I wonder if it would be possible and reasonable to have a check box in
the MT63 setup window to lock/unlock it in the waterfall?

One school of thought is that this is actually an advantage. MT63,
especially MT63-2000, is used a lot on VHF/UHF channels where there's
not a lot of tuning, and this is one less paramater for an operator to
have improperly configured.
