I don't know how it is in America but in Europe people sometimes squat buildings and then turn them into social centres with a bar and maybe a cafe and a bookshop selling alternative literature (fanzines, anarchist publications, stuff on social issues etc. normally from a leftist point of view). Also if there's enough space they often make some sort of venue for live music or DJs. Many of these squats don't last that long because the police and local councils don't like the idea of people utilising derelict space efficiently to provide something for the community and would rather such buildings just rotted rather than people enjoy themselves in them. Having said that some squats have lasted for years it depends who actually owns the building and how bothered they are about it being squatted.
