South of the Border Eggs Benedict

Prep/Cook Time: 20 minutes

Serves: 4
Ingredients:
1 1/2 cups PaceĀ® Picante Sauce 
1/2 tsp. ground cumin 
4 eggs 
2 pkg. (3 oz. each) cream cheese, cubed
4 slices Canadian bacon 
2 English muffins, split and toasted
1 tbsp. chopped fresh cilantro 
Directions:
MIX picante sauce and cumin in skillet. Heat to a boil. Add eggs carefully to 
skillet and cook over low heat until done. Remove eggs and keep warm.
ADD cream cheese to skillet and stir until blended. Cook bacon in another 
skillet until lightly browned.
TOP each muffin half with 1 slice bacon and 1 egg. Spoon picante sauce mixture 
over eggs and sprinkle with cilantro.
