I would not recommend that. First, the wiki would be scattered around the different Gitlab projects (some are Github based!). Who would be responsible for keeping this all up-to-date? Second, it would not integrate nice with the FreeDOS website. Third, I do not think that it is a good idea to be too dependent on Gitlab. Even if it is self-hostable, you have to pay for some advanced features.
I would rather go the other direction: Shifting more towards self-hosted services. There is plenty of good OSS wiki software out there which can be self hosted with reasonable effort.
I would also integrate at least a read-only git mirror of the important software packages on the FreeDOS website. Probably Gitea based, because it is a good compromise between functionality and maintainability. This would also add an option for people not wanting to use Github and/or Gitlab to host their DOS related projects at the FreeDOS site.
